Fluffy Banana Oat Pancakes

Serves 2 ( Makes 8 Pancakes - 1 serve is 4 pancakes)

1 ripe banana

2 eggs + 1 egg white

2 tsp baking powder

1/2 tsp cinnamon

1 1/2 cups traditional rolled oats

1/2 cup unsweetened non - dairy milk (i used almond)

1/4 tsp salt

1 tsp vanilla - optional

1 tbs sugar free maple syrup + additional to serve

(I also like to serve with vanilla yopro and 1/2 cup frozen berries heated)

To Make:

In blender add all ingredients, blitz until smooth. heat a non stick frying pan over medium heat, spray with coconut oil and cook until bubbles appear, flip pancake and cook for another minute until cooked through. repeat. (makes 8)

To serve:

Drizzle with sugar free maple syrup and top with extra banana or fresh berries (for this image I made a compote using frozen berries, simmering on the stove until reduced) , i also love to serve mine with a heaped spoon of coconut yogurt or yo pro.

Hack # For an additional treat you can drop 3/4 choc chips in each while cooking.
