GF Healthy Banana Bread
3 medium overripe bananas, mashed (1 1/2 cups)
1/3 cup melted coconut oil
1 large egg, beaten
1 teaspoon vanilla extract
1 1/2 cups gluten-free all purpose flour (I used Bobs Redmill)
3/4 teaspoon baking soda
3/4 teaspoon baking powder
1/2 teaspoon salt
1 Tbs Sugar Free Maple Syrup (optional)
Simply mix all the wet ingredients and combine the sifted dry ingredients. Place in a preheated oven (170-180 depending on your oven) and bake until a skewer comes out clean.
*mine baked for 1 hour.
Tip : slice an extra banana to decorate before baking ( I always sprinkle a little coconut sugar on the banana so it caramelises).
